Super easy cheescake

2 packages cream cheese
1 tsp vanilla
1 cup sugar
2 eggs
12 vanilla waffers
1 can blueberry pie filling or whatever kind you want

Prep muffin tin with muffin liner and waffer on the bottom
Mix cream cheese (make sure cream cheese is room temp) sugar and vanilla add eggs one at a time

Bake 350 25-28 min

Yellow Cake

1 box yellow cake
1 small box vanilla pudding
1/2 cup oil
1/2 cup milk
4 eggs
8 oz sour cream
1 bag minature chocolate chips

Mix all ingredients adding chips last bake 350 for 50-55 minutes

Mom's Spaghetti

1 lb hamburger
1 lb spicy Italian sausage
1 green pepper, diced
1 onion, diced
3 cans tomato sauce
1 bottle mushrooms (and juice)
3 Tbl yellow mustard
6 Tbl red wine vinegar
1/2 bottle Italian seasonings
2 Tbl sugar
salt and pepper

Brown the meat with pepper and onion. Drain fat and then add everything to a big pot. Simmer for as long as you can (all day preferably)

Clam Chowder

1/2 pound bacon cut into pieces
1 medium onion
Canned clams (3 or 4 if using small cans) Be sure to retain clam liquid
4 or 5 potatoes cut into bite size chunks
1 package frozen corn
Half and Half
Milk

Fry bacon pieces. When almost cooked, add chopped onion and saute
Drain off bacon grease (or not depending on how many calories you want to remove)
Add clams with their juices
Add chopped potatoes and corn
Bring to a boil. Put a lid on the pot and turn off the burner. Allow the potatoes and corn to cooked in hot liquid. By doing this the potatoes will not get mushy. When potatoes are fork tender add half and half and milk. Again the amount of half and half depends on the calories. Add enough milk to make the consistency you like. Add fresh ground pepper. Reheat and enjoy!!!

Oatmeal Chocolate Bars

Oatmeal Cookie Mixture
1 Cup Butter
2 Cups Brown Sugar (packed)
2 Eggs
2 t vanilla
1 t salt
1 t soda
3 Cups Oatmeal
2 1/2 Cups Flour
1 Cup Chopped Nuts

Filling
1 12 oz package Semi-Sweet Choco Chips
1 T Butter
1 Can Sweeten Condensed Milk
1 t vanilla
1/2 Cup Chopped Nuts

Grease 9x13 inch pan with butter. Mix Cookie Ingredients and spread 3/4 of mixture into bottom of pan.

Melt Filling Ingredients (choco chips, butter, milk & vanilla); add nuts. Spread over oatmeal mixture in pan. Spread remaining cookie mixture on top of fudge filling. Bake at 350 degrees for 25 minutes.

Football Chili

3 pounds lean ground beef
1 (46 fluid ounce) can V8 juice
1 (15 ounce) can stewed tomatoes
1 (15 ounce) can stewed tomatoes with mild chilis
2 (15 ounce) can kidney beans, drained and rinsed
2 (15 ounce) can pinto beans, drained and rinsed
2 chopped onion
2 chopped garlic cloves
1 chopped green bell pepper
¼ tsp ground cayenne pepper
1 tsp white sugar
1 tsp dried oregano
1 tsp ground black pepper
2 tsps salt
3 tsps ground cumin
¼ cup chili powder

Brown beef along with onions and garlic then drain.

In a large pot over high heat combine the ground beef, V8 juice, tomatoes, kidney beans, pinto beans, onions, bell pepper, cayenne pepper, sugar, oregano, ground black pepper, salt, cumin and chili powder. Bring to a boil, then reduce heat to low. Simmer for 1½ hours. (Note: If using a slow cooker, set on low, add ingredients, and cook for 8 to 10 hours.)

Pumpkin Pancakes

2 cups all-purpose flour
3 tbls brown sugar
2 tsp baking powder
1 tsp baking soda
1 tsp ground allspice
2 tsps ground cinnamon
1 tsp cloves
½ teaspoon ground ginger
3 shakes of pumpkin pie spice
½ teaspoon salt
1½ cups milk
1 cup pumpkin puree
2 eggs
2 tbls vegetable oil
2 tbls vinegar


In a separate bowl, mix together the milk, pumpkin, egg, oil and vinegar. Combine the flour, brown sugar, baking powder, baking soda, allspice, cinnamon, ginger and salt, stir into the pumpkin mixture just enough to combine.
