1 C cottage cheese

mandarin oranges

Dressing (makes extra; do not poor entire contents on salad)
1 1/2 T poppy seeds
3/4 C white vinegar
1 1/2 C oil
3/4 C sugar
1 1/2 T grated onion
1 1/2 t salt
3/4 t dry mustard

Szechuan Noodle Salad
4 ounces oriental noodles or spaghetti, broken up
3 tablespoons oil
3 tablespoons honey
1 tablespoon oriental sesame oil
1 tablespoon rice vinegar
1 tablespoon soy sauce
1 1/2 teaspoons ginger root, grated
1 teaspoon crushed red pepper flakes
3 cups chicken, cooked and shredded
1 cup red cabbage, finely chopped
4 green onions, thinly sliced
2 carrots, shredded
1 red bell pepper, chopped
1/2 cup dry-roasted peanuts
1. Cook noodles as directed on package.
2. Combine oil, honey, sesame oil, vinegar, soy sauce, ginger root and red pepper flakes.
3. Drain noodles and rinse in cold water briefly. In large bowl combine cooked noodles, chicken, cabbage, onions, carrots and bell pepper. Pour dressing over salad and toss to mix. Sprinkle with peanuts.
