Mom's Spaghetti

1 lb hamburger
1 lb spicy Italian sausage
1 green pepper, diced
1 onion, diced
3 cans tomato sauce
1 bottle mushrooms (and juice)
3 Tbl yellow mustard
6 Tbl red wine vinegar
1/2 bottle Italian seasonings
2 Tbl sugar
salt and pepper

Brown the meat with pepper and onion. Drain fat and then add everything to a big pot. Simmer for as long as you can (all day preferably)

Della Fontana Marinara Sauce

1/4 cup ground onions
1/4 cup ground green bell pepper
1/4 cup ground carrot
2 28oz cans tomato soup
1 cube beef base
2 tsp basil
1/4 tsp white pepper
1/4 tsp black pepper
1/4 ground rosemary
1 1/2 Tbls brown sugar
2 tsp salt
1 1/2 cups water

Sachet (cheese cloth bag)
2 bay leaves
1/2 tsp pickling spice
1/2 tsp anise seeds

Place all ingredients in a 2-quart pan and bring to a low boil and add sachet bag.
Reduce heat to simmer and simmer for one hour.
Discard sachet bag and serve.

Della Fontana White Sauce

2 Tbls butter
3 Tbls flour
1 pint whole milk
1 pint half&half
1/2 cup full-bodied sherry wine
1/2 tsp granulated garlic
1/2 tsp salt
1 cube chicken bullion (crushed)
1/2 tsp white pepper
1/4 tsp ground thyme
1/4 tsp ground Italian spice
1/4 tsp ground sage
1/4 tsp ground nutmeg
2 bay leaves

In a saute pan, melt butter for roux.
Stir in flour using a wooden spoon.
Continue to cook on medium heat, stirring constantly, until roux begins to turn dark brown.
Remove from heat and let cool to room temperature.

In a 6-quart sauce pan, heat milk and half & half on high until it begins to boil.
Add wine and bring back to a boil.
Using a wooden spoon, stir in roux (roux must be cooled to room temperature or the sauce will clump)
Reduce heat to a strong summer and continue to stir constantly for 10 minutes
Add all other ingredients to sauce and stir for 10 more minutes.
Strain sauce through a fine strainer and serve.

Horseradish

1 cup pealed and cubed horseradish root
3/4 cup white vinegar
2 tsp sugar
1/4 tsp salt
blend in blender

Mom's Green Chile

1 lb ground pork
1 medium onion (chopped)
1 clove garlic (chopped)
1 tsp chilie powder
1 tsp oregano
1 tsp cumin
1 tsp coriander
2 7oz cans green chilies
1 can Hatch tomatoes and chillies
1 large can diced tomatoes
salt and pepper

Brown prok with onions and garlic
Add everything else
Cook for 1.5 hours
